Introduction:
Some coffees you just know from the first smell of the bag — this is one of them. Danse Mormora comes from the same Guji highlands that have given us some of our all-time favourite cups, and this Special Prep lot is a step above the standard offering. Expect cooked blueberry layered with mellow cola, a juicy acidity, and a sweetness that borders on syrupy. If you loved our last Guji, this one's going to feel like coming home.

Danse Mormora is a washing station located about 5 kilometres from the town of Haro Lebetu, where farmers grow coffee in fertile clay soil at high elevation. What's locally called "Bourbon" here isn't the same variety known by that name in Central and South America — in Ethiopia it typically refers to coffee-berry-disease-resistant cultivars.
This lot is a Special Prep (what producers in Ethiopia generally call "Premium"), meaning the cherry is hand-selected from a limited number of smallholder farmers — 90% perfectly ripe, with only 5% semi-red and 5% overripe let through. It's processed and stored separately from the standard lots, usually from a single day's picking, which is part of why these lots are always so small. After sorting and a clean rinse, the cherry is spread on raised beds and rotated constantly through 8–25 days of drying, depending on the weather.
Coffees in Ethiopia are typically grown on very small plots of land by farmers who also grow other crops. The majority of smallholders deliver their coffee in cherry to a nearby washing station, where it's sorted, weighed, and paid for or given a receipt. The washing stations serve as many as several hundred to sometimes a thousand or more producers, who deliver cherry throughout the harvest season — the blending of these cherries into day lots makes it virtually impossible to know precisely whose coffee ends up in which bag, which is part of what makes true traceability so difficult in Ethiopia. We do, however, make every effort to source from the same washing stations year after year, through our export partners and their connections with mills and washing stations.
Typically, farmers in this region don't have access to and therefore don't utilise fertilisers or pesticides in the production of their coffee.
